Made with natural clays mined in Maiano, the biscuit is shaped by hand, air-dried for over six months, and finally fired in wood-fired ovens at approximately 800°C. This completely artisanal process gives the material its unique characteristics: ideal porosity, fire resistance, and the ability to maintain a constant temperature, ensuring a perfectly cooked pizza in just seconds.
